Description

-Mix yeast, water and honey
-Let stand for 5 min
-Add flours and salt, mix until dough forms
-Let rest for 30 min
-Stretch and fold for 2hrs every 30 min.
-Shape into banneton
-Cold proof in fridge overnight
-Bake at 230c with enough steam
